Oh my God this pie. This recipe is from Bill Smith who is the chef at Crook’s Corner. There’s much to be said about Bill and about Crooks but I’ll save that for another post. What I will say though is this recipe exemplifies Bill’s kitchen creativity and personality. He takes simple ingredients and makes phenomenal food that is complexly flavored but not fussy.
What makes this pie so great? Bill’s genius move of using Saltines for the crust. SALTINES PEOPLE?!?! Who’d have thunk it?
If you do one nice thing for yourself this week, make this pie. It’s perfect! Tart, but not too tart, and not too sweet. It’s crispy crusted, buttery, salted bliss. Add a dollop of lightly sweetened fresh whipped cream – swoon. I’m betting this pie will make many appearances on your table. I love this recipe and hope you do too.
