This is one of my new favorite recipes. It comes from Shelley Albeluhn who posted the recipe to Allrecipes. The addition of cornmeal gives this muffin the most tender texture. They’re not too sweet and hands down they’re one of the best muffins I’ve ever eaten. Instead of frozen berries I used 1 cup of fresh blueberries that I rinsed in a colander and after shaking the water off I added them to the dry ingredients. The moisture helps the flour coat the berries so when the batter is stirred together the berries don’t all sink to the bottom. Other than that I followed the recipe exactly. Enjoy!
